MIKE'S EASY NEW ORLEANS NEW ENGLAND NEW JERSEY JAMBALAYA

6 ckicken legs; 3 Italian sausage, cut into thirds; 1 cup sm or med shrimp; 2 cups rice(dry); 4 cups chicken broth or water; 1/2 cup each: cerery, green pepper, onion,all diced; 1 chili pepper, diced; 1 clove(or 2) garlic.

Fry flour coated chicken in a little oil and set aside. In a large pot cook the sausage in a little oil. When nearly done, add the chopped vegetables. Saute 5 minutes. Add the chicken broth and rice. (If you use water instead of broth, throw in a boullion cube, please). Salt and pepper. Add raw shrimp. Mix. Place chicken on top. Cover. Bring to low boil. Lower heat, and simmer until rice is cooked.
Vary amounts of meats, vegs, if you wish; still good if you don't have the shrimp.

SICILIAN FISH

Flavor is awesome because of the Sicilian olives.

1/3 cup olive oil ..........1 small onion.........1 clove garlic.......salt and pepper.....3 tbs parsley.........2 tbs basil.....1 tbs chopped celery leaf......1 35 oz can peeled tomatoes, drain and chop.....20 Sicicilian green olives, pitted and sliced.....2 lbs fish (cod, halibut,pollock)

In a large skillet heat oil, add onion, garlic; cook over low heat until onion is golden(8 min.)
Add tomatoes, salt and pepper, and olives. Bring to boil, lower heat and simmer for 15 min.
Add parsley, basil, celery leaf; simmer 5 min. more.
Add fish fillets; simmer until fish is done(about 20 min.) Garnish with celery leaves.

LENTIL AND SAUSAGE SOUP

One of those 'better the second day' things. Cut recipe in half if desired; but it freezes well.

6-8 Italian sausages(mild)....28 oz can crushed tomatoes....2 cups dry lentils....2 med onions.....
4 cloves garlic....1 cut up green pepper....1 diced carrot....rosemary....6 whole cloves....tabasco....
bay leaf....olive oil....2 chicken bouillon cubes....6 cups water

Cut sausage sinto bite sized pieces; cook in a large pot in 3tbs oil until done.
Add peppers, carrot, and garlic; saute 4 minutes;
Add tomatoes, seasonings, boullion, and water; Bring to boil. Add lentils, lower heat.
Cut onions in half(horiz) stick cloves in onion; put in pot.
Simmer 1 hour or until lentils are tender. Discard cloves.

FISH DELIGHT

1 lb fish (cod, haddock,or other) cut into bite-size pieces
4 tbs butter, melted
15 Ritz crackers, crushed
2 eggs, well beaten
1/2 cup shredded cheddar cheese

Put fish in casserole dish.
Pour eggs over fish. Sprinke cheese on.
Mix butter and 2/3 of the crackers together. Sprinkle over top. Salt and pepper to taste. Sprinkle rest of crushed crackers (dry)on top.
Bake at 350º for 30 minutes.

MIKE'S EASY SAUSAGE BEAN SOUP

3/4 to 1 lb bulk Italian sausage
1 med. onion, chopped
1 green pepper, chopped
3 garlic cloves, minced
1 can (15 oz) cannelli or navy beans, drained
1 can (15 oz) black beans, drained
1 can (15 oz) red kidney beans, drained? yes.
1 can (28 oz) tomatoes, crushed or chopped, DO NOT DRAIN
3 cups beef broth or 3 cups water and 3 boullion cubes
2 tbs fresh basil, chopped or 2 tsp dried basil
2 tbs fresh oregano(we got it in our garden year round Ha, Ha) or 2 tsp dried
dash of tabasco or pinch of cayenne, you know, something to heat it a bit.

Cook sausage with onion and garlic in a soup pot.

Add all other stuff. Simmer 20 minutes ...or an hour...til you are ready to eat.
Add more water if needed.

That's it! We like to grate a little parmesan or adiago on the top.

EGGPLANT'MEAT'BALLS

Easy, and a good meat(less)ball, too.

PEEL eggplant
CUT into 1/4" to 1/2" cubes
HEAT oil in skillet with 2 tbs water.
Brown the eggplant. Then let cool.

Preheat oven to 350-375 degrees.

MIX eggplant with 2 eggs, dry bread crumbs ,pars;ey, salt and pepper and
peccorino romano cheese. (or adiago, or parmesan)
Make into balls and place on a slightly oiled baking dish.
BAKE until browned. About 30 minutes.

Serve with spagetti and tomato sauce.

The quantities are up to you; one doesn't measure in making meatballs.
Guide: medium eggplant, 1 cup crumbs, 1/2 cup grated or shredded cheese.
