FRUIT JAZZ

Empty one 16oz. can of cherry pie filling into an 8"square pan.
Top with contents of a single layer Jiffy yellow cake mix.
Drizzle with 1/2 cup of melted butter.
Bake at 350F for about 30 minutes. Chill.

WHACKY CAKE

Damn, it's Aunt Wakko's birthday and I don't even have a cake mix in the house.Well, relax Wacky Cake will be here in 35 minutes.

1 1/2 c flour
1 tsp vanilla
1 c sugar
1 tsp vinegar
3 Tbs cocoa
5 Tbs veg. oil
1 tsp baking soda
1 c cold water
1/2 tsp salt

In a bowl mix flour, sugar, cocoa, soda, and salt.
Make three wells in the mixture. Put the vanilla in one well, the vinegar in another, and the oil in the third. Pour water over and stir. Just wet it all, do not beat.
Pour into 8x8 pan and bake at 350° until it springs back, about 30-35 minutes.

ZUCCHINI BREAD

3 eggs beaten
3/4 cup oil
2 cups sugar2 cups raw zucchini
2 cups flour
1/2 tsp baking soda
3 tsp cinnamon
1 tsp baking poder
1 tsp salt
3 tsp vanilla 1 cup chopped walnuts
1 cup raisins

blend oil and sugar. Add egg and zuchini. Add flour, nuts and rest of ingredients. Bake
in 2 loaf pans for 1 hour @ 300 degrees.

CHOCOLATE MOUSSE

6 tbsp. very strong coffee
4 tbsp. brandy
1/4 cup sugar
2 cups heavy crea

1 tbsp. sugar } whip cream until foamy. add
1/4 tsp vanilla } ingredients and beat until thick

Mix coffee and brandy in double boiler and heaat . Add chocolate and stir until smootha
d melted. Add sugar and beat until glossy. Remove from heat and cool. Fold chocolate
mixture into whipped cream. Chill before serving in individual dishes.

 


TORTONI

1/4 cup brown sugar
1 cup flour
3/4 cup broken walnuts
1/2 cup butter


Mix above ingredients together. 
Brown mixture until crumbly in oven (about 15 min.at 350 degrees.
Whip 2 egg whites, 1/4 cup sugar, and 1 small package frozen
strawberries.
Whip 1/2 pint heavy cream and fold into above mixture.
Pat 3/4 of crumbs in bottom of 9x13 inch pan. 
Put strawberry mixture on top; then the rest of crumbs.
Place in freezer overnight or at least 4 hours.
